I bought coconut flour a few weeks ago and have wanted to try it out. I’m having friends (one of whom has a gluten sensitivity) over for dinner tomorrow night, so I thought these brownies would be the perfect thing to make. They’re baking in the oven as I type this so hopefully they taste as good as they look! I’m also making a Tamale Pie for dinner and will post the recipe later in the week.
Ingredients
1/2 cup, less 1 tablespoon, coconut flour
1/c cup dark cocoa powder
1/2 cup plus 2 tablespoons coconut oil, melted
3 eggs
1/2 cup plus 2 tablespoons honey or maple syrup (I used honey)
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chunks
Preheat oven to 300º F. Grease or line with parchment paper a baking dish (8×8 or 9×9). Mix together all ingredients by hand or with an electric mixer. Pour into the prepared baking dish and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean. Cool for 30 minutes before cutting/removing from the pan. Store at room temperature or in the fridge in an airtight container.
P.S. I couldn’t wait the 30 minutes! For a non-traditional brownie, they’re pretty good! :p
