Brownie Bites with Marshmallow Creme Frosting

IMG_1090I made these brownie bites for the big game last weekend, and I could have eaten the whole tray!  They were the perfect bite size mix of chocolate and marshmallow.  I made the brownies from scratch, and I highly recommend doing the same instead of using a premade mix.  The recipe should make a double batch of mini muffin shaped brownies with plenty of frosting.  These will be the perfect treat for your Valentine ♥!

Ingredients
1 12 -ounce bag semisweet chocolate chips
2/3 cup packed brown sugar
2 large eggs
1 teaspoon vanilla
1/2 cup flour
2 tablespoons unsweetened dark chocolate cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt

For the frosting:
1/2 cup butter at room temp
2 cups (roughly) Marshmallow Fluff
1 cup powdered sugar
1 teaspoon vanilla

Preheat oven to 350º F.   In a medium saucepan over medium heat, melt the butter, chocolate chips, and brown sugar, whisking occasionally.  Remove from heat and whisk in the eggs, one at a time, then the vanilla, whisking until smooth. Whisk in the flour, cocoa powder, baking powder, and salt until combined.
Pour batter into mini muffin pans (grease lightly if not using a non-stick pan) till about half way full.  Bake at 350º F for about 10 to 15 minutes.  Remove from oven and cool slightly before removing brownies to a wire rack.
While brownie bites are baking, beat the frosting ingredients together until smooth and well combined.  Generously frost each brownie bite and enjoy any leftover frosting with a spoon!  Happy Valentine’s Day!♥
