This is one of the easiest and most delicious desserts you will ever make! After buying 6 pints of blueberries, I had a surplus of them and wanted to make something other than a crisp since I wasn’t in the mood for oats. The original recipe calls for a whole stick of butter, and in my opinion, the more butter the better! But you can definitely cut it down to 1/2 a stick. I made it twice and used 6 tablespoons. It was just enough to give it that salty, buttery flavor while complimenting the sweetness of the blueberries. This obviously isn’t the healthiest dessert, especially if you serve it with vanilla ice cream, but it’s well worth having to put in some extra time at the gym!
Ingredients
5-6 tablespoons butter
1 cup flour
1 cup sugar
1 1/2 teaspoons baking powder
1 cup 2% milk
4 cups blueberries
Preheat oven to 350° F. Place butter in an 8″ square (or similar size) baking dish. Melt butter in the preheating oven, about 5 minutes. Remove from oven.
In the meantime, mix the flour, sugar, baking powder, and milk in a bowl until combined. Pour the batter over the melted butter and scatter the blueberries over batter. Bake for about an hour or until a toothpick inserted into the center comes out clean. Serve warm with vanilla ice cream. Enjoy!
