Peanut Butter & Honey Oat Bites (w/ Coconut)

photo 3 (3)These Peanut Butter & Honey Oat Bites are easy to whip up and make for a great snack.  Two different friends from college both shared this recipe with me so I knew they must be good.  I have a couple other go-to recipes for homemade granola bars, and this one will join the mix!  Feel free to mix in seeds (chia, flax, etc.), nuts, shredded unsweetened coconut, or for more of a treat, dip them in chocolate like my friend Nikki does.  (I’m pretty sure she would add chocolate to every recipe if she could!)  Enjoy 1 square for a mid-morning or mid-afternoon snack. 🙂

1 cup all natural peanut butter (or almond butter)   3/4 to 1 cup honey
3 cups quick cook oats
Optional: 1/2 cup of the seed, nut , etc. of your choice (I’m obsessed with all things coconut so I used unsweetened shredded coconut for this batch.)

Place the oats and optional add-ins in a large bowl and set aside.  In a medium bowl, combine the honey and peanut butter.  Microwave on high for about 45 seconds until they melt.  Remove from microwave and stir to combine.  Add the peanut butter and honey mixture to the oats.  Stir to combine.

photo 2 (2)photo 4photo 2Press the mixture into a 8×8 brownie pan.  Refrigerate about 3o minutes until set.  Cut into 1 inch squares.  Store in an airtight container.  They can be kept in the fridge on warmer days.  Enjoy!
